If you haven’t heard, Boulder, Colorado got hit with some pretty terrible flooding late last week and this weekend. It was a very serious situation and lots of people had to be evacuated, not to mention a few tragic deaths, a fair amount of damage, and just an overall state of emergency.
I go to school in Boulder and just made it out Wednesday night before things got really bad. Classes were cancelled Thursday and Friday and started back today. It’s the first day I’ve seen the sun for more than a few minutes since early last week.
I’m grateful that I don’t live in Boulder proper or any of the immediately surrounding areas, so I wasn’t affected by flood damage, though my heart goes out to all the people and animals that were. I know I definitely got lucky and this is a really difficult time for a lot of people in my community.
My weekend didn’t begin until Friday though (I wouldn’t let it), so I spent all of Thursday doing homework and most of Friday as well. I made Angela’s Pink Power Detox Smoothie to keep me going. It was great but I added a banana, which I thought rounded out the flavors nicely.
On Friday night, my friend Alex came over and we took a trip to Target to get gummy bears and Reeses pumpkins (my favorite Halloween treat) and then watched Donnie Darko, which I had never seen.
On Saturday, my plan was to do homework all day but late Friday night got an invitation for a dinner party at a friend’s house and on Saturday found out my mom was taking my aunt to lunch for her birthday, so I joined in on that.
Even though we just went to the Olive Garden, I dressed up because it’s more fun that way and I really wanted to wear this outfit!
These are my favorite boots paired with a black Portifino Dress from Express and a belt also from Express (Polyvore set to come!). I also wore my new Grecian headband, which I was so excited about!
After lunch, I headed to Ulta to pick up a new hair dryer and some eyeliner before going to the dinner party. I enjoyed a frozen margarita in a tube and a few appetizers while I caught up with my friends whom I hadn’t seen since we went on vacation together over the 4th of July.
Before dinner, we ended up playing an epic game of air hockey on their new-to-them mini air hockey table. My sister was the reigning champ but she only beat me by one point…next time Kristin..next time…
Of course we also enjoyed some beverages…
I have great friends who know this is my drink. I just can’t wait until I get my Kopparberg in for the fall!!

During my last semester of college I lived in an apartment complex that had a pool table in the club house and to blow off steam and take a study break from writing my thesis, I’d go play pool by myself. Sometimes I’d lose…
The rest of the evening was spent dining on Thai Basil Edamame Burgers on rosemary rolls from Great Harvest, along with various salads. I’ve been able to include more gluten in my diet lately because my stomach isn’t as bothered by it, which makes me very happy. Bread is delicious. It also meant I got to partake in dessert–blueberry and blackberry cobbler!
I did more homework Saturday night and Sunday morning went to church. It was a rainy, dreary day so I decided to put some magic in it by spicing up my makeup…
While this looks blue-ish, it’s actually purple eyeliner, purple mascara, and purple eye shadow over the liner (also there’s some black liner underneath and a little black mascara as the first coat). From a few feet, you actually can’t tell there’s any color, but the closer you get, the crazier it gets. It’s a fun look.
Sunday was spent doing more homework and the evening included another movie night with Alex. We watched The Eternal Sunshine of the Spotless Mind, followed by a deep philosophical discussion (because we’re cool like that). Apparently it was a psychological/philosophical movie weekend. I also made Vegan Caramelized Pumpkin Cheesecake bars.
The taste was good but the texture needs work before I post the recipe.
Classes finally resumed today and campus was re-opened since the first time since Wednesday. As I was leaving to drive up to Boulder, I felt something prick my ankle right before I got into my car. I pulled out a microscopic white thing with a little black dot. I had no idea what it was but it felt like a shard of glass had just pierced my skin.
I kept driving and was in a lot of pain so at one point I reached into my shoe to see if there was anything there and pulled out a dead bee!! This was the first time I’ve EVER been stung by a bee! At the age of 24!
My ankle looked absolutely hideous by the time I got to school. Swollen and red and just sad. I have to tell you, I had no idea that bee stings hurt that bad! I was in so much pain all day, even now, 12 hours later! The swelling moved down into my foot, which just makes it look funny since half of my tattoo is puffy.
However, it was a good day and good to be back in class. I was getting a bit of cabin fever with all that time off and no sunshine.
This evening I’m busy studying for exams (yup, already!) and feasting on vegan coconut curry and coconut infused rice.
The curry turned out wonderfully and it’s such an easy recipe, perfect if you’re a student or busy human. Stay tuned for this recipe tomorrow!
